"IOTs-sparkling yeast" was otselektsionirovana at Institut Oenologique de champagne Institute, it is race of IOC 18-2007. Yeast is multiplied in the conditions of pure culture, dried up and packed in the environment of protective gas.
The preparation satisfies to the existing standards.

Processing purpose
"IOTs-sparkling yeast" has various application. But especially they are intended for bottle fermentation in the course of production of sparkling high quality wines. However, they can be applied also to fermentation of strong red and white wines. Excellent fermenting abilities at low temperatures allows to carry out controlled fermentation (14-18 °C). At fermentation they give neutral taste. The high usoychivost of yeast needs to pay special attention to alcohol even at low temperatures.
Dosage
For secondary fermentation of sparkling wines bring 1-2g on 1dal. If it is carried out fermentation at temperatures below 15 °C or if it is required to receive characteristic barmy taste, it is possible to increase a dosage to 2,5-3,0 g / gave for red and white wines 2,0-2,5 g / gave.
