As a result of scientific searches it is established that wheat contains starch and other carbohydrates (more than 60%), different proteins - leykozip, glutenin, gliadine (to 22%), and also fat, cellulose, zone substances - phosphorus, potassium, calcium, magnesium and others (to 2%) and different enzymes. The nutritional and medical value of wheat is given by the vitamins of B1, E group found in significant amounts, sincaline and some other substances.
