Description
Scientists were always interested in a chemical composition of the major grain cereal. Numerous researches of grain of wheat established that its structure contains starch and other carbohydrates in quantity from 50% to 70%, depending on wheat grade. Also, various proteins, from 10% do20%, depending on a grade are a part of wheat. In wheat there are vegetable fats, vitamins (B1, B2, B6, C, E and PP) and minerals (potassium, calcium, magnesium, phosphorus, etc.). Also, in wheat grain there is a large amount of various active enzymes.
