Carbonators and premixes
Carbonators call the installation intended for saturation of liquids.
The term saturation comes from the Latin word saturatio and means saturation. In our case, it is about saturation of liquids gas, i.e. dissolution of gas in liquid.
Usually carbonators use for saturation of liquids carbon dioxide (CO2).
In order that liquid was well saturated with carbon dioxide (CO2), it, first, has to be free from others, the gases dissolved in it. Secondly, temperature of liquid has to be no more than 10 ° C, it is better 3-4os therefore before saturation water needs to be cooled.
Ideally, the carbonator consists from two vertical colon:

- deaeration column;
- saturation column:

In other, the carbonator can consist only of saturatsionny column, as shown in drawing.

The deaeration column, is intended for release of liquid from the oxygen dissolved in it.

Water, through spray, is sprayed by thin streams on the special punched plates, being exempted from the dissolved gases which are utilized then by means of the special vacuum pump.

The saturation column, is intended for liquid saturation by gas.

Deaerated water is soaked up by the saturation pump. The device of preliminary introduction of CO2 is connected to the lower part of the pump.
Water with CO2 entered previously is pumped in saturation column where it is sprayed on special plates from stainless steel. This operation is carried out in the environment saturated with CO2 with frequent change of pressure and temperature. Thus there is also saturation.
The carbonator can be equipped also sistemoydozirovaniye and mixing of ingredients, and then it is called premix carbonator.

The premix carbonator presented on drawing consists from:

- the deaeration block with the vacuum pump;
- block of saturation of CO2;
- device of dispensing and hashing of water and syrup;
- the stop block for final stage of preparation of drink (stabilization of drink).

Let's consider phase of dispensing and mixing of ingredients and phase of stabilization of ready-made product.

In this phase sparkling water and syrup arrive by means of the piston dosing pump of high pressure which carries out simultaneous dispensing of water and syrup in the set ratio. Mixing of two products happens with special to column. Then, in the same column there is stabilization of ready drink.
