Canned fish

Fish canned food - the fish and seafood which passed special processing and suitable for long storage.

Production of fish canned food includes sterilization of fish and seafood during certain time for destruction of activity of the organisms causing damage of food. The prepared fishes and seafood are packed into a tight container.

In the course of production of fish canned food raw materials caloric content does not decrease. The mineral substances which are contained in fish and seafood also remain almost without loss. In the course of production of fish canned food and as a result of long storage the part of the vitamins which are contained in fish and seafood collapses.

Fish canned food in dependence of a type of the processed raw materials is divided into the following groups:

• canned food from fish
• canned food from sea invertebrates
• canned food from marine mammals
• canned food from seaweed.

Fish canned food depending on a way of processing is divided into the following types:

fish canned food from natural raw materials in the course of which production fish and seafood are exposed to thermal treatment only during sterilization and flavoring and aromatic qualities of a ready-made product depends on natural properties of raw materials;

fish canned food from the prepared semi-finished product in the course of which production fish and seafood are processed by various ways of thermal and chemical treatment therefore natural taste of raw materials changes.

Fish canned food differs also on a way of filling. As filling vegetable oil, tomato sauce, etc. can be used.
